Grain-free Chocolate Chip Banana Bread Muffins

I cannot believe it has been a year since I began my Instagram  account @TheBalancedRose, originally @Roseinthe_Kitchen! Happy 1st birthday! Woohooo! (Sorry, I am just super excited!) Quite the year it has been, so full of growth, of rebirth and of falling apart, ups, downs, amazing memories, and trying moments, but such a beautiful and wonderful journey along the way. I thought a celebration recipe was in order so I thought back to one of my favorites.

When I was a freshman in college, I decided I would try out the paleo diet, consuming meats, vegetables, fruits, and nuts. While at a later date I can get more into my experience in eating paleo, the truly only good thing that came out of my time being paleo were these AMAZING Grain-free Chocolate Chip Banana Bread Muffins. I have made them for the folks at my old CrossFit box so they can vouch, they are delicious and healthy! Made without any refined sugars, grains, or dairy, these muffins are a

winner in my book.

Forget about the fact that they don’t have refined sugars, grains, or dairy, they also have wonderful & nourishing ingredients! These muffins are chock full of vitamins and minerals from the bananas, healthy fats from coconut oil and almond meal, fiber and protein from coconut flour and egg whites, and some Enjoy Life chocolate chips because everyone deserves some chocolate. Over countless times of making these delicious muffins, I believe I have perfected the recipe, but how about you all give it a try!


Grain-free Chocolate Chip Banana Bread Muffins


  • 2 very ripe bananas
  • 3/4 cup almond meal
  • 1/4 cup coconut flour
  • 2 egg whites
  • t tbsp coconut oil melted
  • 1 tbsp almond butter
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/3 cup Enjoy Life chocolate chips optional but highly recommended


  1. Preheat oven to 350 degrees.

  2. Combine all dry ingredients and set to the side.

  3. Mix wet ingredients together in another bowl and then combine them with dry ingredients.

  4. Fold in 1/3 cup chocolate chips with a rubber spatula.

  5. Spoon the batter into a oiled muffin tin or use parchment paper cups.

  6. Bake until tops of muffins are golden brown, should be about 30 minutes depending on your oven.
